"Use It Up" Challenge Continued... Again

 I am heading out on a road trip, yet I continue to accept the challenge to use up what I have. When I sorted the pantry, fridge and freezer out not too long ago, I determined that I would take as much of my own food as possible on this trip. I made a list of things that I could take inspired by what I had on hand but knowing that it would have to be supplemented with some grocery shopping, i.e. cowboy caviar and chips and pasta salad. I was proud of this plan. After getting through a birthday celebration and a special Easter dinner, I found that I only had $7 left in my grocery budget. I decided NOT to go to the store and get those supplemental items. I would HAVE to make do and USE IT UP. I found bologna and honey ham in the freezer. In the pantry, I found mustard, peanut butter, bread, sweet potato chips gifted to me by a friend, British chips brought by Maceo at Christmas time, a bag of crackers leftover from Christmas charcuterie, cheese puffs that were given to me at work, a handful of nilla wafers, and a small box of Moroccan cookies. Also, in the pantry, I found pretzel rods and white chocolate and made chocolate covered pretzels. I found, in the fridge, cheeses leftover from Valentine's charcuterie and Easter dinner; as well as, gourmet jams and mustard. I found lemon drops and gum from my Christmas stocking, leftover biscuits wrapped in plastic wrap on the table, a banana and tangerines in the fruit bowl, and a grapefruit in my lunchbox. I packed all this up, tossed in some boiled eggs and the bread Bishop baked for me the evening before the trip and press on with the challenge.

April 21: B- bologna sandwiches; L/D- pizza from the hut, pepperoni with green chili; Snack- Moroccan cookies. 

April 22: B- leftover pizza, the other half of the grapefruit, Bishop's bread, tangerine; L- green chile cheeseburger, pineapple slaw, and a strawberry and chile lemonade from Sparky's; D- baked potato. Fridge = 1.

April 23: B- Mama made eggs, bacon and toast; L- treated to stuffed sopaipillas at a cafe; D- Mama made a roast with carrots.

April 24: B- Mama made eggs, bacon and toast; L/Snacks- bologna sandwiches, Maceo's British chips, nilla wafers, lemon drops and gum; D- Bishop greeted me with steak, avocado, potatoes, chocolate and oat cake with hazelnuts and fruit compote topped with whipped cream. Pantry = 1, Freezer = 1.

Total Pantry = 3

Total Fridge = 1

Total Freezer = 1

"Use It Up" Challenge Continued

 I am going to press on with my "Use It Up" Challenge. I am going to attempt to reset my food storage. This was a goal that I had at the beginning of this year and some new developments seem to reinforce that goal. Our grocery budget has now been divided amongst the three of us remaining at home and we are largely preparing our food independently. Herb is eating keto, Bishop has gone largely meat free and sugar free, and that leaves me to my own devices. So, I am digging deep into my food storage, using what I have, and learning what works for me; what foods I prefer and how much time I want to devote to food preparation. I am evaluating what aspects of my meal planning, storage and prep method that I developed while raising the kiddos still applies and what I should let go of. I am purchasing perishables; otherwise, I am crafting meals from what I have on hand.

April 7: B- leftover steak from Texas Roadhouse and eggs; L/D- Christian's birthday meal of grilled bacon and onion sandwich, grilled veggies, and New York style cheesecake. Pantry = 1; Fridge = 1; Freezer = 2.

April 8: B- cornflakes with blueberries; L- leftover chicken and grilled veggies; D- leftover bacon sandwich and grilled veggies.

April 9: B- cornflakes; L/D- Easter meal of ham, peach chutney, oven roasted asparagus, loaded brussel sprouts, green bean casserole, rolls, cream cheese pie. Pantry = 8; Fridge = 1; Freezer = 1.

April 10: B- cornflakes; L/D- Easter leftovers.

April 11: B- cornflakes; L/D spaghetti and leftover greens. Pantry = 2; Fridge = 2.

April 12: B- boiled eggs, baked cheese crackers; L- leftover spaghetti and greens; Snack- graham crackers with frosting; D- steak, baked potato, banana pudding. Pantry = 3; Fridge = 1; Freezer = 1.

April 13: B- boiled eggs, baked cheese crackers; L- leftover steak and greens; D- leftover steak, egg and biscuits with jam. Pantry = 1; Fridge = 1.

April 14: B- boiled eggs and biscuits; L- leftover ham and greens; Snack- baked cheese crackers; D- macaroni and tomato sauce, grapes. Pantry = 5; Freezer = 2.

April 15: B- cornflakes and scrambled eggs; L- leftover ham and green bean casserole; D- spaghetti at Roxie's and pie day.

April 16: B- panera breakfast sandwich; L- leftover ham and green beans; Snack- leftover banana pudding; D- leftover macaroni and tomato sauce, greens, blueberries. Fridge = 1.

April 17: B- cornflakes, boiled egg; Snack- chocolate covered pretzels; L- leftover macaroni and tomato sauce, greens; D- scrambled eggs with ham, leftover biscuits with the absolute best damson plum jam that has just been languishing in my pantry forevsies, leftover greens.  Pantry = 3

23 Hard Things in 2023 - UPDATE

In addition to my larger goals which were expressed at the beginning of the year, I have expressed the intention to attack 23 hard things during this year. These are things that I believe will add something of value to my life or just need to be done but I have struggled to prioritize. I'm ready to check in and evaluate my progress!

1). Write 12 snail mail letters. I am actually known for not writing letters but have felt convicted that I should be communicating in this form to people who have touched my life in a super special way. To date, I have sent off 4 letters. 4/12 done!

2). Initiate three dates with hubby. No progress yet.

3). Purge 1200 items. At this very moment, I have purged 864 from my home. This does not count food items used in the "Use It Up" Challenge nor the scrapbook items used in my journaling endeavor. There is still a long way to go but I can see and feel the difference. I sometimes get frustrated or impatient with my progress but, overall, am quite pleased. Being able to see a difference is motivating. I press on.

4). Read 48 books. I started out VERY slow with this goal but am now on a roll. At this moment I have read 18 of the 48 books.

5). 12 of the 48 books read need to be books I own. Five of the 18 books that I have read are ones that I already own. I am making great progress with this goal. My larger goal is to have read every book that I own. I can make this happen. 5/12.

6). Have one adventure per month. YUP. For me, an adventure is doing something new or something that takes me out of my comfort zone. In January, I went to an esthetician and got an amazing facial. In February, I attended a lecture at a museum. In March, I visited gyms and did a workout at one. Thus far, in April, I attended Easter service at an Anglican church. That won't be my last adventure for the month. I'm building momentum! :)

7). Make and maintain a minimum of six monthly journals. I am up to date on my journaling. I have completed three journals, thus far, representing January, February, and March. I am working on April's journal, day by day.

8). Make a minimum of 36 blog entries. This will make my 8th blog entry this year. Not bad, not bad.

9). Repair camera. DONE. I was afraid that something had gone really wrong with my camera and when I experience fear and shame I then seek to avoid addressing the issue. I have not used my camera in over a year. As frequently happens, the issue that I was afraid of addressing turned out to be simple to address. I can be so ridiculous sometimes. I purchased a new rechargeable battery for my camera and that did the trick!

10). Repair mandolin and learn one song. Not yet.

11). Dance. I have had one good dance session in the kitchen when no one else was at home. MUST. KEEP. DANCING.

12). Learn to tiptoe (move like a child). DONE. I did it!!!

13). Learn to skip (move like a child). Not yet.

14). Do one cartwheel, although a round off will do (move like a child). Certainly not yet.

15). Remove tree from front yard. DONE. The front yard is now heartbreakingly empty but the much needed task has been completed.

16). Repair front porch stairs. NOPE.

17). Write letter to Carole's mother. The rough draft has been written.

18). Take vitamins a minimum of 275 days of the year. At this point, 106 days into the year, I have an 84% success rate. Stating this goal so definitively has really helped me focus. I have had 100% success over the last month!

19). Floss teeth a minimum of 275 days of the year. I had a really slow start while attempting to develop this habit but am on a roll. Presently, I have a 57.5% success rate. It WILL improve!

20). Track expenditures a minimum of 275 days of the year. I have a 99% success rate on this one!!!

21). Do not go to Andy's alone. I scored myself some Andy's frozen custard alone one time this year, in January. I have been tempted a LOT. I am pleased with my progress. I'm going to keep fighting the good fight!

22). Try 15 new smoothie, salad, or vegetarian recipes. I haven't tried one YET.

23). Complete at least 75% of Balance the Sword, Volume One. I am making great progress on this one. Getting started was the hardest part. I am enjoying it now. Having set such a clearly defined goal has been very motivational. I am a quarter of the way to reaching my goal!

Although I had established goals at the beginning of the year and some of these hard things overlap with those goals, I began 23 Hard Things in 2023 just one month ago. I am satisfied with my progress. I've got this!!!

Lifestyle of Learning 2023 Edition: Volume 2

 March 15 - April 17

It is important to me that I challenge myself to learn and grow....

I have made significant progress in working my way through Balancing the Sword. This book is a comprehensive study guide to the Bible. It has questions related to the content of each chapter of the Bible. I am finding it helpful for motivation and comprehension of the scripture I am reading. I have now read Genesis, Exodus, Leviticus, and Numbers and am presently making my way through Deuteronomy. This dovetailed quite nicely with a Lenten message I read about God rescuing us from our own personal Egypt's.

I attended an Anglican service on Easter day.

Herb and I went for a walk at the botanical center, taking note of what was in bloom during this early spring. It will be interesting to return and note changes. 

I continued to make natural observations. The world is waking up from its wintery slumber. The hyacinths and daffodils have bloomed and the tulips have just opened up. My trees have developed chandelier-like seeds that the squirrels are feasting on. The birds are up bright and early, even in the dark I hear male cardinals singing their beautiful song. The mockingbirds have returned to their nesting sites at work.  

In March, I researched local gyms with the intent that I would get a membership and return to weightlifting. Christian and I visited a couple of gyms together. We even scored a free day pass at one and worked out together. We did back and biceps. I ended up getting a membership at this gym and am beginning to incorporate it into my life. I have found that I still love lifting weights.

I also got back in touch with my love of college basketball during this NCAA basketball tourney. I am the only one in the family that totally digs college basketball and I am wondering how I can nurture this for myself.


If I am recalling correctly, I have baked cheesecake twice in the past. During this month I have baked three cheesecakes. I am getting the hang of this. It is not nearly as arduous as I remember it being. I baked a New York style cheesecake for Christian's birthday and a peanut butter chocolate cheesecake for Herb's birthday and one other occasion. The peanut butter cheesecake is keto friendly; it uses monk fruit as the sweetener. I have learned that I like monk fruit as an alternative to white sugar.

In addition to reading scripture, I am reading a wide range of books, fiction and nonfiction. In March, I read The Littlest Library by Poppy Alexander, Christianity and Liberalism by J. Gresham, Green Fraud by Marc Morano, The Number Devil by Hans Enzensberger, The Power of Fun by Catherine Price, Festivals, Family and Food by Diana Carey and Judy Large, and Leave the World Behind by Rumaan Alam. Thus far, in the month of April, I have read Whatever Happened to Penny Candy? by Richard Maybury (a great introduction to inflation) and The Importance of the Electoral College by Dr. George Grant. I also read In the Garden of Beasts by Erik Larson which tells the story of America's first ambassador to Nazi Germany, William E. Dodd, and his daughter Martha as they" experience the rising terror of Hitler's rule." I am, presently, making my way through Too Loud, Too Bright, Too Fast, Too Tight by Sharon Heller, which is about sensory defensiveness.

I ate at a Cuban restaurant that had live music. A lesson on cultural geography absorbed through the sense of taste and sound - a favorite way to expand my knowledge base.

I learned about Sicilian pizza and it's focaccia-like crust. I was treated to pizza by some friends who had picked up the last pizzas of a pop-up pizzeria. One of those pizzas was said to be a  Sicilian style pizza and it had a thick crust with big airy pockets. I researched Sicilian pizza and learned that it is traditional for them to make pizza on a crust that is akin to focaccia. I learned something new! :)

I am still tearing through podcasts, mostly true crime and political/geopolitical. Here is a sample of what I have been listening to: Snake River Killer, The Coldest Case in Laramie, The Boston Strangler, The Exorcist Files, X22 Report, Timeline: The Disappearance of Cassie Compton, Zone 7 with Sheryl McCollum, Burden, and Walk Softly Children. These aren't merely a form of entertainment for me. The true crime podcasts are full of information that will be useful as I pursue a personal project.

I continue to do my daily journaling. This particular journaling is less a writing exercise than it is an art exercise. I began doing my journals in this more artsy way so that I could utilize the scrapbook supplies that have just been hanging around the house for such a long time. It is an effective way to use paper and ephemera and it stretches my artsy muscles. It can be challenging to capture a days events and thoughts in a way that is aesthetically pleasing.

I wrote several letters, snail mail. This is something that I haven't really done in ages and am finding that writing  compelling, or at least meaningful, letters takes a special skill set. I am working on that skill.

I learned how to play Bandu, a stacking game that involves spatial awareness, dexterity, and, even physics. I also played a game of 42, a game involving dominos and strategy.

My Bible study, Balancing the Sword, has quotes by notable Christians running along the bottom of the pages. Several quotes are from a man I had never heard of before, Arthur Pink. Pink's quotes resonate with me which has, in turn, piqued my curiosity. I learned that he was a pastor, with a Calvinistic worldview, and a prolific writer. His final words were, "The Scriptures explain themselves." He was devoted to studying and expounding upon the scripture. Here is a sampling of his writing: "It is not the absence of sin but the grieving over it which distinguishes the child of God from empty professors." "God is 'light' as well as love; and because He is such, sin cannot be ignored, its heinousness minimized, nor its guilt cancelled."

As I was reading the book In The Garden of Beasts, I began to wonder about the roles of chancellor and president in the German government. I knew that Hitler had been chancellor and I had heard of President Hindenburg but had never really thought about how they co-existed in the framework of the German government, what their roles and responsibilities were. I did some research and learned that the German head of state is the federal president who, 'by their actions and public appearances, represents the state itself, its existence, its legitimacy, and unity' and is mostly ceremonial. The federal chancellor' runs the government and day-to-day politics.'

"Use It Up" Challenge

 From the beginning of the year until now, I have been focusing on preparing meals using what I have on hand. It can be referred to as a pantry challenge but I refer to it as my "Use It Up" Challenge. This is an opportunity to dig deep in my food storage and use up what I have on hand. It encourages me to clean, organize and rotate my food storage and to use those odd bits that somehow make it into my pantry and have been left languishing. And, let me tell you, this challenge has been desperately needed; as is evidenced by the fact that I am STILL challenging myself nearly three months into 2023. Every bit of my food storage space had become a chaotic mess, overcrowded and disorganized, so it was past time to do this "Use It Up" Challenge. Challenges such as this also help me reduce my spending, which is a good thing in helping me reach certain goals. In the past, I have tracked my progress in this challenge by documenting what I served for meals and how many items have been entirely used up from the fridge, freezer, and pantries. This go around I haven't been tracking this information because I would do that on my IG page and have determined not to use that page. However, now that I have revived this blog I can track my progress in this challenge right here. Let's do it!

March 27: B- charcuterie; Snack- chips and salsa; L/D- tomato soup and grilled cheese sandwiches. Pantry= 3; Fridge= 1.

March 28: B- Panera breakfast sandwich; L/D: leftover green bean casserole, hamburger helper. Pantry= 1.

March 29: B- boiled egg, mozzarella stick; L- leftover hamburger helper, leftover green bean casserole; D- 1 1/2 mini pizzas.

March 30: B- boiled egg, mozzarella stick, pumpkin bread; L- leftover hamburger helper, chickpea fritter; D- new hamburger helper, leftover fritter. Pantry = 2; Freezer = 1.

March 31: B- boiled eggs, mozzarella stick; Snack- donuts at work!; L- leftover hamburger helper and fritter; D- 1 1/2 mini pizzas. Pantry = 1; Fridge = 1.
